This evening I got a friend over for coffee and realized we were hungry as well.
Had some frozen chicken filets, but didn't know how it would tasty cooking them without defrost them first. I googled about cooking frozen chicken and found a recipe I modified just a bit, and the result - tasty! (And also very much LCHF)
I used 1 filet per person.
2 frozen chicken filet
Olive oil (Extra virgin)
½ lemon
Salt and white pepper
Put the filets in a oven-proof casserole.
Pour oil (quite a lot) over and squeeze the lemon juice over as well.
Salt and pepper after taste.
Bake in oven at 200°C (392°F) for 1h.
I served with some (some would be like 1 dl/~3 oz) crème fraîche (the fat one of course) that i mixed with 2 minced cloves of garlic, dill and some salt.
Not the quickest thing to cook, but real easy to make.
